There are many recipes out there that we would have never thought to put together. Most of the time they are pure genius ideas too! If you're anything like me, you've watched that show Cupcake Wars seen their insane concoctions, and thought Honestly how would they come up with the idea to put that into a cupcake?! It can't honestly taste that good.... But that crazy French dude, 'e alwayz speeks iz mined... so maybe they are. So today we've got four recipes, that even I might be willing to attempt one day... Question is are you daring enough to try them? Are you a big enough fan to eat Mountain Dew Cake? Or taste-test out some Velveeta Fudge? [90s flashback here] Do You Have It? GUTS!
- 1 box lemon cake mix
- 1 (3.4 oz) lemon-flavored instant pudding
- 1 (12 oz) can Mountain Dew
- ¾ cup vegetable oil
- 4 large eggs
Simple Icing:
- 1 cup powdered sugar
- 4 to 5 tablespoons of lemon juice
Note: This is a recipe that begs creativity. Instead of lemon-flavored ingredients, why not try strawberry cake mix, vanilla pudding, and strawberry soda instead? You can use milk instead of lemon juice in the icing as well. Have fun trying different combinations!
Chicken with cornflakes & Peanut Butter Pancakes

Chicken With Cornflakes
1 chicken thigh
1 1/2 cups corn flakes
1/2 tomato chopped or 1 apple chopped
Cook the chicken thigh in a covered container in a microwave oven at full power for 5 to 7 minutes. Remove the skin if you would like to reduce the amount of saturated fat. Cut up the chicken into bite-size pieces. Return the chicken to the cooking container. Add the cornflakes and stir to moisten with the liquid cooked out of the chicken. Top with the tomato pieces.
Peanut butter pancakes
1/4- to 1/2-cup peanut butter
1 egg
1 cup flour
1 teaspoon baking powder
3/4 cup water or milk
Mix the egg and peanut butter. For easier mixing warm peanut butter in microwave oven for 10 to 15 seconds. Also warm the water or milk. Add the water and mix. Sift together the flour and baking powder. Combine all ingredients and mix.
Pour about a 1/4 cup of batter onto an oiled and preheated skillet or griddle. Spread batter slightly if necessary to have a maxium thickness of about 1/4 inch. Flip after edges start to dry but before bubbles break the surface.
Can be eaten as is without syrup. Try rolling one of these pancakes around half of a banana. This same recipe can be used to make waffles in a waffle iron.
Velveeta Fudge

1 lb. Velveeta cheese, softened
1 18-oz jar peanut butter, creamy
2 c butter, softened
3 c pecans, chopped
4 1-lb packges powdered sugar, sifted
4 T vanilla
1 c cocoa, sifted
Mix cheese, butter, sugar and cocoa in a large bowl, and knead until well mixed. Add remaining ingredients. Knead the mixture until smooth. Press into a buttered baking dish and chill in refridgerator Cut in squares or desired shapes. Store in refrigerator in an airtight container. This recipe can be frozen.
