A Slightly Healthier Cake, But This Time Its Actually Cake!

This is my actual recipe, that my husband LOVES. In fact, between the two of us, we can put away an entire 9x13 cake in less than a week. Its got a healthy feel, although with all the sugar and butter don't get too optimistic. Its a Banana Cake. It also works as a breakfast food! Its like combining banana bread with cinnamon rolls (mainly just the icing of cinnamon rolls).

Banana Cake
  •  2 1/2 c all purpose flour
  • 1 1/2 c mashed bananas (about 3 medium)
  • 1 1/4 c sugar
  • 2 lg eggs
  • 1 t salt
  • 1/2 c butter/margarine softened
  • 1/2 c buttermilk
  • 1 t baking powder
  • 1 1/2 t baking soda
Heat oven to 350°… grease & lightly flour pan. Beat all ingredients on low for 30 secs. Increase to high for 3 min. Pour into pan, bake 45-50 min cool on a wire rack remove from pan.... cool for one hour.... frost w/ vanilla buttercream frosting. If you like walnuts in your banana bread, feel free to sprinkle either in the batter or just over the top of the frosting.
Vanilla Buttercream Frosting
Warning: This frosting is extremely sweet. If you aren't a big sweet fan, you can try using just store bought frosting too.
  • 3 c powder sugar
  • 1/3 butter, softened
  • 1 1/2 t vanilla
  • 1-2 T milk
Mix sugar and butter, stir in vanilla and tablespoon of milk.... beat in enoough remaining milk to make frosting smooth and spreadable....

*too thin-add more powdered sugar
*too thick-add more milk
